Saturday- Leftover sweet potato soup from last week

Sunday- Bunt pan chicken dinner. Google it if you've never tried it, it makes the BEST chicken ever!!!

Monday- Spaghetti squash pasta. You NEED to cook it like this: Crockpot Spaghetti Squash So easy and delicious!!

Tuesday- Swimming night...eating out

Wednesday- Epicure's Fajitas  Loved these with spinach and sour cream. The steamer from Epicure works amazing too!

Thursday- Pancakes and Eggs

Friday- Extraordinary Cheese Pizza from Epicure  Didn't get made, will try next week.

Saturday- Hawaiian Chicken Kabobs      I really enjoyed these, although I just did it in a pan on the stove vs  kabobs.

Wednesday- Turkey & Jack Cheese Chimichangas    On the fence if I would make these again but they were easy to put together.

Thursday- Egg White Omelettes

Friday- Toasted Tomato Sandwiches   An absolute new favourite of mine. I had never has one before in my life.

Wednesday- Maple Chicken with Rice     Will definitely make this chicken again, delicious!

Thursday- Shepherd's Pie    I prefer my own recipe better.

Notes:
Key west chicken was ok..had flavour but I only put half the spice in (mama does not like spicy things, boo!) so I don't feel that I got the full effect.

Mini chicken pot pies were delicious!!! I used the regular sized rolls and just put one part in muffin tin slot.

- Chicken Taziki Wraps. Didn't get a chance to make these last week so trying again this week. Using Epicure's Taziki dip with these.

- Loaded baked potato salad with steak. Another meal that didn't get done last week.

Chili Cheese Beef & Mac I feel this will be a hit with the munchkin...time will tell.

Spinach Artichoke Bites  You can't go wrong with this combination!

Strawberry Crepes Stolen from a friends blog and they come with high recommendations.

*With the hot weather, and no BBQ here, it's been interesting finding meals that don't take an oven or are simple to make in this heat!


Notes:
- Taziki wraps were yummy..put spinach and mushrooms inside
-Chili Cheese Beef and Mac was a giant hit with my boy. He ate a whole plate of supper which never happens!
-Crepes were delicious. Although I cheated and bought the crepes.

Notes:

- Parmesan chicken was really rich but it was good.
- Chicken nuggets were yummy, although I did not bake my breadcrumbs, I just baked the dipped nuggets on a stone pan. I really like the dilly dip that went with them.
- Chicken & Spinach flautas were not made as it was too hot to turn the oven on.

June 23-28 Meal Plan

Spicy Sausage Pasta A repeat meal that is a favourite here.

Coconut Lime Chicken A repeat from last week that was sooo delicious...and I want to use up the remainder of the coconut milk.

Greek Pizza on Panni Bread Stole from a friend's meal plan, looks delicious!

Sun Dried Tomato Pasta

* Fish with Carrot Fries. Mom loves fish so I've been trying to cook more of it and surprisingly it's not as bad as I thought!

Butternut Squash Lasagna Rollups I will be adding spinach to this recipe. Also, most likely omitting the bacon and pecans.



Notes:
- Loved the greek pizza and my son actually ate!
- Did not care for the sun dried tomato pasta...realized I am not a fan of cooking with sundried tomatoes.
- Carrot fries were amazing!!!
- Butternut squash lasagna rollups were delicious although veryyyy time consuming to make and I even skipped some steps. So unfortunately they will not be made very often.

June 16-21 Meal Plan

Sunday- Steak with Loaded Baked Potato Salad

Monday- Chilli  I made a double batch a few weeks ago and froze half of it

Tuesday- Coconut Lime Chicken with Roasted Cauliflower

Wednesday- Fish with Honey Dijon Roasted Potatoes

Thursday- Baked Chicken Mac & Cheese

Friday- Western Sandwiches for an easy Friday night:)


Notes:
- Loaded baked potato salad was amazing! I used red potatoes and did not peel them and I also added some feta cheese to use it up.

- Coconut Lime Chicken was sooo delicious!!! I didn't follow the directions to a T though. I did not half the chicken, I just cooked two small chicken breasts. I also did not add coriander (didn't have any) or hot sauce (to accommodate food preferences). I also didn't cook the sauce on the stovetop, I dumped the whole bag of chicken and marinate in the pan and cooked it. There was a  bit of sauce left for the rice but not much. Will definately make this again!!!

- Honey Dijon Roasted Potatoes were good but needed to be cooked longer than I did.

June 9-13 Meal Plan

Sunday- Chicken Pot Pie This is a favoured recipe around here. For dessert I made this Healthy Peanut Butter Pie it was delicious. I opted to use a graham cracker crust as I already had the stuff for it.

Monday- Sweet Potato Crusted Fish With a cilantro lime  vinaigrette and fresh green beans

Tuesday- Steak with homemade sweet potato fries

Wednesday- Beef Stir fry with this Stir Fry Sauce

Thursday- Chicken Cacciatore Still have not used up the frozen leftovers

Thats it for this week as I will be away Friday and Saturday for my best friends wedding!!!! YAY!

Notes after making these meals-

- The fish was good but not as crispy as I expected and I found the vinaigrette to be too limey I'd only use one lime next time. I did realize from this meal though that I am capable of making fish and it's not as awful as I thought!

- Beef Stir fry sauce was wayyy too salty. I could not find oyster sauce so I used fish sauce so perhaps this was my mistake, regardless i will not make it again.

June 1- June 7 Meal Plan

Saturday- Homemade Chilli

Sunday- Chicken & Cheese Lasagna Roll Up's We didn't get a chance to make these last week

Monday- Eat out...Last night of swimming with the munchkin!

Tuesday- Honey Crusted Mustard Chicken Another one that was not made from a previous meal plan

Wednesday- Pulled Pork in the slow cooker using an Epicure seasoning mix. Serving with Carrot Salad

Thursday- Sweet Hawaiian Chicken I am not making it in the slow cooker as it calls though as I am only using 2 chicken breasts and I do not want it to burn.

Friday- Chicken Cacciatore I made this a few weeks ago and had leftover sauce which I froze so this will be an easy night.


Notes after making these meals:

- Loved the lasagna roll up's and you could put practically anything in them!

- Enjoyed the carrot salad, would make it again.

Notes after making the meals:

Chimichangas were great! I only put butter on one side of the tortillas then brushed them once they were rolled up. Also, I did not cook them in the oven as long as they directed as the tortillas were getting quite crunchy.

We LOVED the One pot cumin and smoked paprika chicken although I would add another veggie to the mix.

-Breakfast for supper. My son loves eggs so this is an easy way to get him to actually eat supper!

- Saturday night Nana is babysitting as I will be out so whatever she decides is on the menu.

Chicken Cacciatore was excellent but I would add another veggie next time I made it.

Note from the past week..

I didn't get a chance to make everything from the last meal plan posted but I highly recommend the Sweet potato burgers and the Chicken sate. 

I also didn't get go post last week but here are a few of the meals we make this week:

-Homemade macaroni salad
-BBQ chicken pizza
-Spaghetti
-Steak with homemade fries. The fries were done with the Epicure Crisper pan, I highly recommend this pan, the fries turned out amazing!!

May 3-9

Finally back with a meal plan! The last few weeks have been a bit hectic between my son being sick and not being home but I am back on track!!

Friday- Cajun Chicken Pasta Going to try this after a recommendation although I am going to try and tone down the spice as my mom cannot handle spice whatsoever. Here's hoping it still turns out yummy!

Saturday- Homemade Spaghetti. Ps I love adding curry to my spaghetti sauce as well it gives a nice different flavour.

Sunday- I am away for a bridal shower so no meal plan.

Monday- My son has swimming class so we will be eating out.

Tuesday- Thai Chicken Sate with Spiral Salad. The salad is a family recipe I will blog later in the week.

Wednesday- Asian Peanut Butter Pork

Thursday- Smokey Sweet Potato Burgers with Roasted Garlic Cream

LOVED the Thai chicken sate

Also, loved the sweet potato burgers! Soo yummy although next time I would use a smaller bun, it was too much for me.

Peanut Butter Cup Cookies

I'm home today with my munchkin so I got a chance to do some baking. We made Peanut Butter Cup Cookies, they are an absolute favourite of ours!

Here's the recipe, they are super easy to make and it doubles well too!

1 3/4 cup flour
1/2 tsp salt
1 tsp baking powder
1/2 cup softened butter
1/2 cup brown sugar
1/2 cup peanut butter
1/2 cup sugar
1 egg
1 tsp vanilla extract
2 tbsp milk
40 mini peanut butter cups

Sift together flour, salt and baking powder. Cream together butter, sugar, peanut butter and brown sugar in a separate bowl. Beat in egg, vanilla extract and milk. Add flour mixture and mix well. Shape 40 small balls and place into a mini muffin pan.

** I find the number of balls I get depends on how big I shape them, which I alter depending on the size of the peanut butter cups I'm using that day. I did a double batch today with the larger foil wrapped peanut butter cups and I ended up with  91 cookies.

Bake at 350 for 8 minutes. Remove from oven and immediately press a peanut butter cup into each cookie. Let then cool completely before attempting to remove.

**I find a spoon the easiest way to get them out in one piece.

These cookies also freeze very well.

April 13-18

Saturday- Home made waffles topped with fresh fruit. I absolutely love my waffle maker and on a snowy day like today what a perfect easy meal!

Sunday- Pork Tenderloin with mini tricoloured potatoes and vegetables.

Monday- Eating out as my munchkin as swimming class that night.

Tuesday- Spicy Sausage Pasta Skillet I got this recipe from a friend and it is AMAZING!!

Wednesday-Grilled Lime Chicken Tacos This is a new dish, we'll see how it tastes.

Thursday- I have pottery class on Thursdays so I will be unthawing leftover spaghetti sauce for mom to make spaghetti with the munchkin.


Getting Started!

I love meal planning as I save money on the grocery bill and feel more organized through out the work week when it comes to cooking after a busy day.

I currently meal plan each week with old fashion paper and pencil then throw out the plan the following week to start a new one. Seems silly right?? Losing perfectly good recipes and later causing more work when I want to find a past recipe I liked. SO I decided that I would try out blogging for the first time, ever. Hoping this will keep me organized and perhaps give others new recipes to try with their families.
